Stainless steel
Stainless steel is an excellent material for cookware; it is suitable for cooking in general, stays tidy and is easy to clean. High quality stainless steel is an absolutely safe material, which will not emit any foreign substances in the food.
What does the mark 18/10 mean?
Steel 18/10 used on Hackman products is austenitic stainless steel. It’s an alloy consisting of several substances, of which some are metals, some metalloids, like carbon. The main metal in the alloy is iron. Mark 18/10 means that it contains about 18 % chromium and about 10 % nickel.
Hackman steel cookware and cutlery are made from austenitic steel (18/10), except for the knives and knife blades, which are made from forgeable, s.c. martensitic steel (18/0).
Aluminum
Coated aluminum cookware is an excellent heat conductor. The pan gets heated rapidly and evenly, since the whole body of the pan acts as a heat conductor, distributing heat efficiently in every direction. The distribution of heat along the base and the sides of the pan reduces the time needed for cooking. Energy is saved as well. Aluminum is a ductile material, which is light to handle.
Cast Iron
Cast iron retains heat, which makes cast iron cookware excellent for frying and stewing. As many say, the best steaks and sweetest stews have always been prepared using cast iron cookware. A pan or casserole once heated stays that way for a long time, owing to the micro structure of cast iron. It con-sists of tiny crystals and graphite flakes, along which heat will spread evenly. These crystals and flakes expand and contract while heated, and the fat or oil used is absorbed in the pores of the pan. Fat forms a kind of isolator between the food and the metal. Fried food will get an exceptionally beau-tiful outside.
Handles
Handles are made of stainless steel or different kinds of plastic as durable bakelite. Newest material is silicone, which withstands heat of up to 180°C.
Cutlery and knives
High quality stainless steel 18/10 is mainly used in Hackman cutlery. Knives and knife blades are made from martensitic steel 18/0. Cutting knives handle is made from plastic and elastomer, sticky elastomer prevents the fingers from slipping.
Coatings
Hardtec 5000 is new reinforced 3-layer non-stick coating that makes dish even more durable in use. Coating for hard, every day use. Suitable for all stoves.
Ceratec° is a new type of ceramic coating made for heavy frying; it endures high temperature. It is also suitable for flambéing. The Ceratec°-coating endures metallic utensils, but not sharp objects or cutting. It is dish-washer safe. Suitable for all sorts of stoves.
Teflon ® Select is a durable coating for everyday use. Thanks to the nonstick coating, you can fry pancakes and blinis without using fat in the pan.
This coating is used in the pancake pans, which are suitable for other hobs, but not for induction hobs.
